St. Lucia fruit cake Also known as Black Cake in some Caribbean islands. Its made from a variety of fruits blended together with rum and fruit wine to create its unique taste and flavour. Our fruit cake is made using fruits soaked in rum for 12 months. This is to ensure the fruit to soak up the rum creating a lasting flavour and leaving the cake moist after baking.
